Over the past few months, I’ve been trying to keep my dinners lighter by avoiding heavy carbohydrates at night and focusing more on protein-rich meals. Salads like this have become a staple in my routine because they are nourishing, satisfying, and incredibly easy to put together after a long day.
This High-Protein Paneer & Kidney Bean Salad is packed with colourful vegetables, hearty kidney beans, and soft cubes of paneer (Indian cottage cheese), making it both wholesome and filling. The creamy cashew–yoghurt dressing brings everything together beautifully, adding richness while still keeping the salad light and refreshing.
Ever since I began experimenting more with food during the lockdown years — when cooking became my creative escape — I’ve loved finding ways to make everyday meals both nutritious and exciting. Recipes like this are a perfect example: simple ingredients, vibrant flavours, and a dish that feels as good as it tastes.
What I love most about this salad is how versatile it is. You can easily customise it with any vegetables you have on hand, making it perfect for a quick dinner, a light lunch, or a protein-packed meal when you want something wholesome without feeling heavy.
Ingredients
For the cashew-yoghurt dressing
- ¼ cup hung yoghurt / Greek yoghurt
- 10 soaked cashews
- 2 tbsp lemon juice
- 1 tsp honey or maple syrup
- ½ tsp cumin powder (or adjust to taste)
- A pinch cayenne chilli powder
- Salt and pepper to taste
For the salad
- 1 cucumber, diced
- 1 carrot, chopped
- 1 green bell pepper (capsicum), chopped
- 1 celery stalk, chopped
- ½ small onion, finely chopped
- 1 tomato, diced (add later)
- ½ cup cooked kidney beans (rajma)
- 100 g paneer (Indian cottage cheese), cubed
- A handful of fresh coriander and parsley (optional) leaves, chopped

Instructions
Step 1: Prepare the Dressing
Add the hung curd, soaked cashews, lemon juice, honey (or maple syrup), cumin powder, cayenne chilli powder, salt, and pepper to a blender. Blend until smooth and creamy.
Step 2: Prepare the Salad Base
In a large bowl, add the cucumber, carrot, green bell pepper, celery, onion, kidney beans, and chopped coriander.
Step 3: Add the Dressing
Pour the creamy cashew–curd dressing over the salad and gently toss everything together until well combined.
Step 4: Add Tomatoes
Add the diced tomatoes and mix lightly so they remain fresh and do not release too much moisture.
Step 5: Add Paneer Last
Finally, add the paneer cubes and gently fold them into the salad. Paneer is delicate, so adding it at the end helps it retain its shape and soft texture without breaking while mixing.

Tips
💡 Adjust the spices according to your palate. I personally enjoy the flavour of cumin with yoghurt, so I usually add about ½ tsp cumin powder.
💡 If you prefer the dressing to be less tangy, add a little more honey or maple syrup to balance the acidity.
💡 The soaked cashews give the dressing a rich, creamy texture without the need for cream or mayonnaise.
