Cottage Pie (Beef Shepherd’s Pie) – Rich, Creamy & Comforting

Cottage Pie is a classic comfort dish, often associated with Shepherd’s Pie, which is traditionally made with lamb. Both dishes originate from the United Kingdom and were created as simple, hearty meals using leftover meat topped with mashed potatoes.

Over time, the beef version became known as Cottage Pie, while Shepherd’s Pie refers specifically to the lamb variation. Today, both are loved for their rich flavours, creamy topping, and comforting, home-style appeal.

This Cottage Pie is rich, flavourful, and finished with a subtle spicy twist. I’ve used Syrah wine to deepen the flavour of the beef, along with extra black pepper and chilli flakes for a gentle heat. The mashed potato topping is creamy and smooth, made with butter, milk, and a touch of cream, then finished with mozzarella and parmesan for a golden, cheesy crust.

It’s a dish that tastes even better the next day, making it perfect for slow, comforting meals.

💡 To make Shepherd’s Pie, simply substitute the ground beef with ground lamb.

Ingredients

For the Beef Filling:

  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 onion, finely chopped
  • 1 carrot, finely chopped
  • 1 celery stick, finely chopped
  • 750–950g ground beef
  • ¼ cup flour
  • ¼ cup tomato paste
  • 2 cups beef stock
  • ½ cup red wine or water
  • 1 tbsp Worcestershire sauce
  • 2 bay leaves
  • ¾ tsp salt
  • 2–3 tsp ground black pepper (adjust to taste)
  • 1 tsp chilli flakes
  • 1 cup frozen peas

For the Mashed Potato:

  • 1.2kg potatoes, peeled & cubed
  • 2 tbsp butter
  • ⅔ cup milk
  • A dash of cream (for extra richness)
  • Salt to taste

For the Topping:

  • 2–3 tbsp grated parmesan
  • A handful of mozzarella cheese
  • 2 tbsp melted butter (optional)

Instructions

Step 1: Sauté the Base

Heat oil in a pan over medium heat. Add garlic and onion, sauté until soft.
Add carrot and celery, cook for 2–3 minutes until slightly softened.

Step 2: Cook the Beef

Increase heat, add ground beef and cook until browned, breaking it apart as it cooks.

Step 3: Build the Flavour

Add flour and mix well.
Stir in tomato paste, beef stock, Syrah wine, Worcestershire sauce, bay leaves, salt, black pepper, and chilli flakes.

Step 4: Simmer

Bring to a simmer and cook for about 25–30 minutes until thickened.
Add peas towards the end.

Step 5: Rest the Filling

Let the beef mixture cool.
Ideally refrigerate overnight, or at least 2 hours for best flavour.

Step 6: Prepare the Mash

Boil potatoes until soft. Drain and mash with butter, milk, salt, and a dash of cream until smooth and creamy.

Step 7: Assemble

Transfer the beef mixture into a baking dish.
Spread the mashed potatoes evenly on top.
Use a fork to create texture.

Step 8: Add the Topping

Sprinkle mozzarella and parmesan over the mash.
Drizzle with melted butter if using.

Step 9: Bake

Bake at 180°C (350°F) for 30–40 minutes until golden and bubbling.

Step 10: Rest & Serve

Let it sit for 5 minutes before serving.

🍽️ Notes & Tips

  • Keeping the beef overnight enhances flavour beautifully
  • Syrah wine adds a rich depth to the dish
  • Adjust chilli flakes and pepper based on your spice preference

*I personally prefer the filling to be slightly gravy-like, as it keeps the beef moist and prevents it from becoming dry. However, you can cook it down further if you prefer a thicker, drier consistency — adjust it to your liking.
